Roasted Chicken with Maple, white miso and Roasted apples

Description

Original recipe by Mélanie Germain in collaboration with Rythme FM featuring our whole grain-fed chicken.

  • 1 whole chicken, 4 to 5 lbs
  • 45 ml white miso
  • 45 ml maple syrup
  • 30 ml soft butter
  • 15 ml apple cider vinegar
  • 4 apples (Cortland or Honeycrisp), quartered
  • 1 onion, quartered
  • 4 cloves of garlic
  • Fresh thyme
  • Salt and pepper
  • Combine the miso, maple syrup, butter and vinegar. Rub the chicken with this paste.
  • Place the apple wedges, onion and garlic in a roasting pan, then place the chicken on top. Season with salt and pepper.
  • Bake at 350°F (175°C) in the oven for 20 to 25 minutes per pound, basting regularly with the pan juices.
  • Serve by adding the fresh thyme on top of the rotisserie chicken!
