  1. Preheat oven to 190 ºC (375 ºF).
  2. Soften cream cheese for 30 seconds in microwave.
  3. In a bowl, mix softened cream cheese, parsley and vanilla well. Salt to taste.
  4. Place chicken on a cutting board and gently slide your fingers under the skin to loosen it from the flesh, including thighs. In harder to reach areas, make a small incision, if necessary.
  5. Spread cream cheese mixture by spoonfuls under skin, then spread mixture evenly everywhere by rubbing top of skin with fingers.
  6. Place chicken in ovenproof dish, without covering.
  7. Cook in oven for about 90 minutes or until meat thermometer shows a temperature of 86 °C (187 °F).
  8. Serve with almond basmati rice and roasted root vegetables.
